<h2>Slow-Cooker Beef Stew</h2>
<p>(Makes enough to fill large slow-cooker and serve 6 people)</p>
<p>1 small onion, chopped<br />
2 stalks celery, diced<br />
2-3 medium carrots, peeled &amp; chopped<br />
1 garlic clove, minced<br />
3 large bakers or white potatoes, cut into 1 inch square pieces<br />
2 inside round marinating steaks, sliced into 1 inch square chunks<br />
1  900 mL container beef stock<br />
2 cups hot tap water (to cover ingredients in crockpot)<br />
1 packet beef stock powder<br />
1 tsp garlic powder<br />
1 tbsp herbs de provence (or a mix of rosemary, oregano, sage, basil, thyme)<br />
a few grinds each freshly ground pepper &amp; sea salt</p>
<p>1 1/2 cups flour<br />
1 cup cold water<br />
seasonings to taste</p>
<p>- Place chopped onions, celery, carrots, garlic, and potatoes in bottom of crock pot and add chopped beef<br />
-sprinkle with garlic powder, salt &amp; pepper, and herbs de provence, mix to coat vegetables and beef evenly<br />
-Pour in beef stock<br />
-Put 2 cups hot tap water in a glass measuring cup, dissolve the beef stock powder into it and pour over vegetable-beef mixture to just cover everything<br />
-Cook on high for 6 hours<br />
-10 minutes before eating: mix the flour into the cold water to form a smooth paste with a fork (no lumps)<br />
-pour the flour paste slowly into hot stew, stirring to mix it in<br />
-let it cook with the lid on for 10 minutes to thicken </p>

<p>I remember going to my Ukrainian Grandma&#8217;s house for lunch with my mom, and there would always be a 12-course meal of homemade donuts, cake, tea, creamed chicken, borcht, fresh kubasa (garlic sausage), and homemade perogies &#8211; cottage cheese, cheddar/bacon, and sometimes blueberry perogies too.</p>
<p>I got ambitious last night and decided to make perogies all on my own. I have made them before, but always as an assistant &#8220;filler&#8221;. Turns out, it&#8217;s not that hard. Especially if you halve the recipe like I did. It took about an hour from start to finish, including boiling the potatoes and it made about 24 perogies, or enough for four people&#8217;s lunch/dinner.</p>

<h2>Cheddar-Bacon &amp; Onion Perogies</h2>
<p><em>(makes approx. 24 perogies)</em></p>
<p><strong>Dough:</strong></p>
<ul>
<li> 2 1/4 cups all-purpose flour</li>
<li> 1 tsp salt</li>
<li> 1 Tbsp butter, melted</li>
<li> 1 1/2 cup sour cream</li>
<li> 1 Large egg</li>
<li> 2 Tbsps vegetable oil</li>
</ul>
<p><strong>Filling:</strong></p>
<ul>
<li>2 large (or 3 medium) baker&#8217;s potatoes, peeled and cubed  (use starchy potatoes)</li>
<li>3/4 cup shredded Cheddar cheese</li>
<li> 1/4 onion. chopped very finely</li>
<li>1/4 cup Real bacon bits (or cooked bacon, chopped into bits)</li>
<li>1/2 tsp garlic powder  (optional)</li>
<li> 1/2 tsp each salt and pepper (to taste)</li>
</ul>
<p><strong>Making the Dough: </strong></p>
<p>1. In a large bowl, combine flour &amp; salt, mix well.</p>
<p>2. Melt butter in microwave in glass measuring cup, on high for 20 seconds or so.</p>
<p>3. Add sour cream to the melted butter and stir well. Add the egg and vegetable oil and mix well.</p>
<p>4. Add wet ingredients to the dry ingredient&#8217;s bowl. Stir until a dough forms. Knead a few times and form into a ball. The dough should be slightly sticky. Cover with damp dish towel and set aside while you do the potatoes.</p>
<p><strong>Making the Filling: </strong></p>
<p>5. Peel, cube and boil potatoes until tender (you are basically making mashed potatoes). Drain, run under cold water and drain again. Mash the potatoes in the pot. Set aside to cool while you grate the cheddar and chop up the bacon and onions. Add the salt, pepper, garlic powder, onions, bacon and cheddar to the mashed potatoes and mix well.</p>
<p><strong>Assembly: </strong></p>
<p>6. Divide dough into two equal sized balls. Roll out one of the balls on a lightly floured counter. Lightly flour the rolling pin just enough so it doesn&#8217;t stick to the dough  (but not too much or else the edges won&#8217;t seal). Roll out to about 1/8&#8243; thickness (you want it fairly thin or else  the perogies will be tough).</p>
<p>7. Take a drinking glass or round cookie cutter (3&#8243;-31/2&#8243; in diameter), flour the cutting surface and cut out circles from the dough. Try to make them as close together as possible.</p>
<p>8. Take each circle and put a rounded teaspoon of filling in the middle. Fold the dough in half, pinch the edges together along the edge one way, and then go back along and pinch again to make sure it&#8217;s sealed completely. You can wet the edges with your finger dipped in water if you find they are not sticking. Roll out the other ball of dough and repeat. (There will be some remnants of dough when you are done cutting, and you can maybe roll it out again, but the perogies tend to get tougher and not stick together when you use this dough.)</p>
<p>9. Place them spaced out on a cookie sheet lined with parchment or waxed paper. Freeze them on the cookies sheet until frozen solid and then store in a Ziploc Freezer bag until ready to cook.</p>
<p><strong>Cooking: </strong></p>
<p>Boil a large pot of salted water. Drop perogies in one by one. Boil until they all float. Drain and eat. My favorite toppings are bacon bits, green onions and sour cream.</p>

<p style="text-align:left;">Blueberry Filling:</p>
<p style="text-align:left;">2 cups blueberries (fresh or frozen)<br />
2 Tbsp Cornstarch<br />
2 Tbsp Sugar<br />
pinch cinnamon</p>
<p style="text-align:left;">Mix above together and place 1 teaspoon of filling in perogies. May want to use a slightly larger circle to cut the dough with. Pinch to make sure they are sealed. Boil as usual and top with homemade whipped cream and icing sugar sprinkled overtop.</p>

<p>I had some leftover Atualfo Mango (the orange skinned ones, but you can use the green and red ones) and was inspired by <a href="http://photograzing.seriouseats.com/">Photograzing</a> contributors and the <a href="http://photograzing.seriouseats.com/2009/06/taco-salsas.html">Fruit Salsas</a> so I decided to make something different.</p>
<h2>Pork Fajitas</h2>
<p><em>(makes 4 fajitas)</em></p>
<p><strong>3 Lean Pork Chops or Pork Tenderloin equivalent amount, sliced into thin strips 1 1/2 inches long<br />
1 tsp Olive or Canola Oil<br />
2 tbsp Fajita or Taco Seasoning (or 1 packet)<br />
1 small Sweet Red Pepper, sliced thinly<br />
5 Mushrooms, sliced<br />
1/2 tsp Garlic Powder</strong></p>
<p><strong>2 cups White or Brown Rice, prepared</strong></p>
<p><strong>4 Large Whole-Wheat Tortilla Wraps</strong></p>
<p><strong>Mango Salsa (recipe below)</strong></p>
<p>In medium frying pan, add olive oil to pan and saute pork strips on medium high heat for 5 minutes. Add taco seasoning, red pepper and mushrooms and garlic powder,  and cook another 3 minutes or until pork is cooked through. </p>
<p>Put wraps on a plate, pile a few spoonfuls of  rice down the middle, then pork, then mango salsa. Fold up the bottom, and tuck one side over the middle and roll to wrap up. Enjoy! </p>
<h2>Mango Salsa</h2>
<p>2 Atualfo Mangoes, peeled, sliced and diced very small<br />
1 Sweet Orange Pepper, diced finely<br />
3 Tbsp Thai Sweet Red Chili Sauce<br />
Juice of 1 Lime<br />
1 Tbsp White Sugar<br />
Green Onions<br />
1 Tbsp chopped Fresh Cilantro (Coriander)</p>
<p>Mix all ingredients well and let sit in fridge for 10 minutes to let the flavours mix. Use to top fajitas or eat with tortilla chips.</p>

<p>How can you improve upon a classic like strawberry shortcake? Add Chocolate!</p>
<h2>Chocolate Strawberry Shortcake Dessert</h2>
<p><strong>2 cups fresh Strawberries, washed &amp; sliced thinly</strong></p>
<p><strong>Whipped Cream:</strong></p>
<p>-in a chilled bowl, beat on medium speed-  1 cup whipping cream with 1 tsp vanilla extract and 2 tsp sugar until semi-stiff peaks form</p>
<p><strong>Double Chocolate Sour Cream Scones</strong> (recipe is below)</p>
<p>Slice scone in half, top with dollop of whipping cream, then pile on strawberries and top with the top half of scone. </p>
<h2>Double Chocolate Sour Cream Scones</h2>
<p><em>(makes 8 large scones or 16 small ones)</em></p>
<p><strong>1 cup All Purpose Flour<br />
1 cup Whole Wheat Flour<br />
1/4 cup Brown Sugar<br />
3/4 tsp Baking Soda<br />
2 tsp. Baking Soda<br />
1/3 cup Unsweetened Cocoa Powder</strong></p>
<p><strong>5 Tbsp Chilled Butter, cut into small slices (must use butter and it must be cold)</strong></p>
<p><strong>1 Large Egg, beaten lightly<br />
8oz Sour Cream (can use light sour cream or plain yogurt)<br />
1 cup Semisweet Chocolate Chips</strong></p>
<p>Preheat oven to 400 degrees F. Line baking sheet with parchment paper. In a large bowl, combine the flours, sugar, baking soda, baking powder and cocoa. Mix well. Cut in the cold butter pieces with a pastry blender or two knifes until the butter is in tiny chunks the size of pennies.</p>
<p>In another bowl or 4 cup measuring cup, beat egg lightly with a fork, add sour cream and mix well. Add wet mixture to middle of dry mixture. Add chocolate chips and mix until flour mix is just moistened and forms a ball. You may need to add 1-2 Tbsp milk if dough is too dry.  Knead a few times and turn dough ball out onto prepared pan. Press into a flat circle that is 2&#8243; thick. With a sharp knife, cut in four &#8220;pie&#8221; sections, then cut each section in half again. </p>
<p style="text-align:right;">Bake in 400F oven for 15 minutes. Cool on pan.<br />

<p>I make this homemade pizza dough quite often. It is usually quicker than ordering pizza, and is much healthier. The trick is to use instant yeast that rises in the 10 minutes it takes to grate cheese and slice toppings. Leftovers are great for lunch the next day too.<br />
The recipe is similar to my Foccaccia Bread, which you can find <a href="http://craftycookie.wordpress.com/2009/01/26/focaccia-bread/">here</a>. </p>
<h2>Wholewheat Pizza Dough</h2>
<p style="text-align:left;margin:0;padding:0 0 18px;">(makes 1 large pizza or two 6&#8243; individual pizzas) </p>
<p style="text-align:left;margin:0;padding:0 0 18px;">In a mixing bowl, whisk together until dissolved:</p>
<ul style="margin:0 0 0 1.4em;padding:0 0 18px;">
<li><strong>1 Tbsp. white sugar</strong></li>
<li><strong>1 package (about 2 tsp.) instant yeast</strong></li>
<li><strong>1 cup warm (not hot) tap water</strong></li>
</ul>
<p style="margin:0;padding:0 0 18px;">Then add, mixing with wooden spoon:</p>
<ul style="margin:0 0 0 1.4em;padding:0 0 18px;">
<li><strong>1 cup Wholewheat Flour (or half white /half whole-wheat flour)</strong></li>
<li><strong>2 Tbsp Olive Oil</strong></li>
<li><strong>pinch salt</strong></li>
</ul>
<p style="margin:0;padding:0 0 18px;">Mix in with wooden spoon and then your hands to form a ball:</p>
<ul style="margin:0 0 0 1.4em;padding:0 0 18px;">
<li>another <strong>1 cup to 1-1/2 cup more flour</strong> to make a nice dough</li>
</ul>
<p style="margin:0;padding:0 0 18px;">Knead 1 minute. Cover bowl with a dampened clean dishtowel or paper towel and let rise in a warm place (I put it on the stove so it gets heat from the oven warming up) about 10 minutes while you get the toppings together.</p>
<p style="margin:0;padding:0 0 18px;">Preheat oven to 400 degrees F. </p>
<p style="margin:0;padding:0 0 18px;">If you have a pizza stone (available from Stokes Kitchen Supply store for ~$14 or Pampered Chef parties for $40) spread about 1 Tbsp cornmeal evenly over stone surface. Or, grease a round pizza shaped cookie sheet with a little olive oil and sprinkle with 1 Tbsp cornmeal (even if it says it is non-stick).</p>
<p style="margin:0;padding:0 0 18px;">Grate about 1 cup mozzarella or chosen cheese. Slice mushrooms, onions and other toppings. </p>

<p style="margin:0;padding:0 0 18px;">Transfer dough to middle of pizza stone/cookie sheet and press to flatten dough until 1 inch thick.  Top with tomato paste or other sauce (You can use pasta sauce but I find it makes the pizza soggy). Then add your meat, mushrooms and other toppings before finishing with the cheese.</p>
<p style="margin:0;padding:0 0 18px;">Bake in 400F oven for about 15-20 minutes or until cheese is melted and bubbly and the crust is slightly browned on the bottom.</p>

<p style="margin:0;padding:0 0 18px;"><strong>Canadian Feast Pizza</strong>: tomato paste, black forest ham, mushrooms, crumbled italian sausage, real bacon bits, mozzarella &amp; cheddar cheese</p>
<p style="margin:0;padding:0 0 18px;"><strong>Italian:</strong> tomato paste, bottled basil pesto, baby spinach leaves, fresh tomatoes, mozzarella and parmesan cheeses</p>
<p style="margin:0;padding:0 0 18px;"><strong>White Pizza:</strong> Alfredo sauce, diced cooked chicken breast, mushrooms, mozzarella and parmesan cheeses</p>
<p style="margin:0;padding:0 0 18px;"><strong>Greek Souvlaki:</strong> Jarred Sundried Tomato Pesto (in Pasta Sauce aisle) or tomato paste; diced chicken cooked with oregano, lemon juice and minced garlic; thinly sliced white onions, kalamata olives, fresh diced tomatoes (patted with paper towel to remove moisture), 1/2 cup mozzarella cheese, 1/2 cup crumbled feta cheese. </p>
<p style="margin:0;padding:0 0 18px;"><strong>Taco Pizza</strong>: Tomato paste mixed with salsa, 1 cup crumbled cooked ground beef with taco seasoning, 1/4 cup black beans (drained well), corn kernels and green onions. Topped with mozza and cheddar cheeses. Top with diced fresh tomato just before serving.   </p>

I was feeling under the weather and this homemade chicken noodle soup with lots of ginger and garlic did the trick to get me healthy again. You can use any veggies you have around. </p>
<h2>Asian Chicken Noodle Soup</h2>
<p>1-2 chicken breasts, cut into 3/4 inch cubes or you can use cooked, chopped rotisserie chicken : )<br />
1 Tbsp Sesame Oil<br />
1 tsp Olive oil</p>
<p>1 Leek, just the white part, washed very well and sliced thinly *see below how to wash a leek*<br />
Carrots, sliced thinly<br />
1/2 Zucchini, diced<br />
1 inch piece fresh Ginger, peeled and minced or grated<br />
2 Garlic Cloves, minced</p>
<p>1/2 cup Snow Peas, cut in half<br />
1/2 can Baby Corn, drained and rinsed<br />
Salt &amp; Pepper<br />
1/2 tsp Garlic Powder</p>
<p>1 1L box Chicken Broth<br />
2 tsp Low-sodium Soy Sauce<br />
1-2 cups Water<br />
1 cup dry Egg Noodles, or whatever pasta you prefer</p>
<p>1 bunch Green Onions, sliced thinly for garnish</p>
<ul>
<li>In a large deep soup pot, saute chicken on medium-high heat in olive oil until mostly cooked through, then add sesame oil. If using rotisserie chicken, heat the chicken with the sesame oil.</li>
<li>Add leek, carrots, zucchini, ginger and garlic, &amp; cook 5 minutes stirring occasionally.</li>
<li>Add snow peas and baby corns, cook 2 mins. Season veggies with Salt &amp; Pepper and Garlic powder.</li>
<li>Add chicken broth, and egg noodles. Add 1-2 cups water to cover everything. Simmer on medium heat for 10 minutes or until noodles are tender.</li>
<li>Garnish with green onions sprinkled on top.</li>
</ul>
<p>*How to wash a leek* </p>
<p>Leeks look like overgrown green onions and they grow in sand which tends to get stuck in their many layers. They are a bit of a pain, but their flavour is totally worth it.  To start, cut the tough green part off and the roots off the bottom. Slice the leek lengthwise once, and then again for each piece. Separate the layers with your fingers, placing them in a strainer. Wash thoroughly under running tap water.  Drain. Slice each lengthwise again and cut them into smaller pieces.</p>

<p>I know this is a very popular salad but I am going to write about it anyways. I found some boconccini (fresh mozzarella balls) in the deli section at a grocery store and couldn&#8217;t wait to make this simple salad. I can&#8217;t believe something so simple tastes that good. This salad depends on the quality of your ingredients, so make sure you get tomatoes that smell like a tomato should. if they don&#8217;t smell, then they won&#8217;t taste good.</p>
<h2><strong>Tomato-Basil-Mozzarella Salad</strong></h2>
<p>(makes 4 side servings)</p>
<p>3 Fresh, Vine Ripened Tomatoes <br />
1 cup Boconccini (fresh mozzarella balls) *You can use small slices of regular mozza in a pinch<br />
1 bunch Fresh Basil Leaves (about 15 leaves)<br />
Olive Oil<br />
1 tsp Balsamic Vinegar (optional)<br />
a pinch of salt and fresh ground pepper</p>
<ul>
<li>Slice or dice tomatoes into 1 inch pieces, slice mozza balls in 1/4 inch thick slices and put in serving bowl. Drizzle with olive oil, balsamic vinegar, season with salt and pepper. Toss lightly to mix and let sit 5 minutes so flavours can blend before serving. </li>
<li>If you are entertaining, you can slice tomatoes and mozza into rounds and arrange on a platter, alternating a tomatoe slice, cheese and basil leaf. Drizzle with the dressing and salt and pepper.</li>

<p>This is a potluck favorite in my husband&#8217;s family.  No matter how much is made, there are people fighting over the last bits- people&#8230;..fighting over spinach! I forgot to take a picture of it last night, so the one above is pretty close to what it will turn out like.</p>
<h2>Spinach Salad</h2>
<address>For the Salad:</address>
<h4>3-4 eggs, hard boiled (directions below)<br />
4 cups fresh spinach, washed and dried<br />
5-6 sliced mushrooms<br />
1/2 a medium red onion, sliced very thinly into rings<br />
6-7 slices bacon, cooked until crisp and crumbled  (I use 1/2 cup of the &#8216;Real Bacon Bits&#8217; from Costco)<br />
1/2 cup grated mozzarella cheese</h4>
<p>1. Put eggs in a pot, cover them with cold water. Cook on maximum until they start to boil, then set a timer for 12 minutes. When done, run eggs in pot under cold water until they are cool. Let cool some more while you make the dressing.</p>
<p>2. Next, prepare the dressing.</p>
<address>Dressing:</address>
<h4>1/4 cup olive oil or canola oil<br />
5 Tbsp. White Vinegar<br />
2 tsp dry mustard powder or prepared dijon mustard (can use less if you don&#8217;t want it very strong)<br />
3-4 dashes Worcestershire Sauce<br />
2 Tbsp white sugar<br />
1/2 tsp salt and pepper (or to taste)<br />
1 clove garlic, finely minced</h4>
<p>3. Mix dressing ingredients in a measuring cup or mug.  Let sit while you prepare the salad.</p>
<p>4. Wash and dry spinach. Place in bowl. Peel and slice hard-boiled eggs, place on top of spinach in bowl. Top with mushrooms, bacon bits, red onion and mozzarella.</p>
<p>If you are taking it to a potluck, cover with saran wrap and refrigerate. Toss with dressing just before serving or else it will get soggy.</p>

<p style="text-align:left;"><strong>Cranberry Sauce</strong></p>
<p style="text-align:left;">2 &#8211; 6 oz packages fresh cranberries (washed and picked through)</p>
<p style="text-align:left;">1 cup apple juice</p>
<p style="text-align:left;">1 cup sugar</p>
<ul>
<li> Throw it all in a deep pot with a lid.</li>
<li>Cook over medium heat until the liquid boils and the berries start to pop.</li>
<li>Cook 2 minutes more with the lid on, then remove from heat.</li>
<li>Mash with a potato masher to desired consistency (I like it chunky with some whole berries left)</li>
<li>Pour into bowl to cool (it will thicken) and refrigerate until ready to use.</li>
<li>Eat hot or cold, or use to make Cranberry Trifle, below:</li>
</ul>
<p style="text-align:left;"> </p>
<p style="text-align:left;"><strong>Cranberry Trifle</strong></p>
<p style="text-align:left;">2 cups Whipped Cream (beat 1 cup chilled whipping cream on medium-high speed with 1 tbsp sugar and 1 tsp Vanilla extract) </p>
<p style="text-align:left;">2 cups Brownies or chocolate cake (made from a box mix), cut into small cubes</p>
<p style="text-align:left;">1 can Cranberry-Cherry Pie Filling mixed with 1 -1/2 cup homemade cranberry sauce</p>
<p style="text-align:left;">Instant Vanilla Pudding, prepared to package directions</p>
<p style="text-align:left;"><strong>In a pretty bowl (preferably clear so you can see the layers), layer the ingredients in the following order:</strong></p>
<ul>
<li>1/2 the Brownie/Cake cubes</li>
<li>1/2 the Vanilla Pudding </li>
<li>1/2 of the Cranberry-Cherry Pie filling mixed with cranberry sauce</li>
<li>1/2 the Whipped cream</li>
<li>Brownies/Cake cubes</li>
<li>Vanilla Pudding</li>
<li>rest of the cranberry mixture evenly over the top</li>
<li>Dot the top with the rest of the whipped cream</li>
<li>top with shaved dark chocolate (use a carrot peeler to shave curls off of a chilled chocolate bar)</li>

<p style="text-align:left;"><strong>Focaccia Bread</strong></p>
<p style="text-align:left;">makes 1 pizza-sized loaf</p>
<p style="text-align:left;">In a mixing bowl, whisk together until dissolved:</p>
<ul>
<li><strong>1 Tbsp. white sugar</strong></li>
<li><strong>1 package (about 2 tsp.) instant yeast</strong></li>
<li><strong>1 cup warm water</strong></li>
</ul>
<p>Then add, mixing with wooden spoon:</p>
<ul>
<li><strong>1 cup All-Purpose Flour (or half white /half whole-wheat flour)</strong></li>
<li><strong>2 Tbsp Olive Oil</strong></li>
<li><strong>pinch salt</strong></li>
<li><strong>1 tsp. garlic powder</strong></li>
</ul>
<p>Mix in with spoon and your hands to form a ball:</p>
<ul>
<li>another <strong>1 cup to 1-1/2 cup more flour</strong> to make a nice dough</li>
</ul>
<p>Knead 1 minute. </p>
<p>Grease cookie sheet with a little olive oil. Sprinkle pan with 1 Tbsp cornmeal. Flatten dough on cookie sheet until 1 inch thick, and cover with clean damp dish towel. Let rise in a warm place for 15 mins. while oven preheats to 375 F. </p>
<p>Use your fingers to poke holes down into the risen dough.</p>
<p>Drizzle the top with <strong>2 Tbsp olive oil</strong>.</p>
<p>Top with:</p>
<p><strong>sea salt</strong><br />
<strong>herbs de provence (rosemary, marjoram and oregano)</strong><br />
<strong>basil</strong><br />
<strong>garlic powder</strong></p>
<p>Bake for 15 mins or until it turns golden brown. Slice and serve with a dip of balsamic vinegar and olive oil.</p>

<li>Add 2 Cups sliced fruit such as kiwis, strawberries, grapes, banana, apples, blueberries, peaches, mango or your favorite fruit</li>
<li>Serve chilled.</li>

<p>I know quiche sounds fancy and scary to make, but it is really easy and can be prepped and in the oven in about 15 mins. Especially if you use pre-cut broccoli.  </p>
<p><strong>Broccoli Bacon Quiche</strong> (makes 2 quiche)</p>
<p>1 cup sliced mushrooms<br />

1Tbsp olive oil and 1Tbsp butter</p>
<p>5 eggs<br />
1/2 Miracle Whip or Mayo<br />
1/3 cup milk<br />
1-2 tbsp. Dijon Grainy Mustard<br />
Pinch each of Salt &amp; Pepper<br />
1 tsp Garlic Powder<br />
1 tsp Smoked Paprika<br />
1 c. shredded cheese (cheddar, mozzarella- feta is also good)<br />
2 frozen pie shells (keep frozen until ready to use)<br />
1/2 c bacon bits</p>
<ul>
<li>Pre-heat oven to 375 degrees F.</li>
<li>In large frying pan, add olive oil &amp; butter, and saute mushrooms, broccoli and other veggies over med-high heat for 5 mins. or until tender, season with salt &amp; pepper.</li>
<li>In a mixing bowl, whisk 5 eggs together. Mix in miracle whip, milk, mustard. Season with garlic powder, smoked paprika and salt &amp; pepper. Mix in shredded cheeses and veggies.</li>
<li>Put each pie shell on a cookie sheet. Pour filling into frozen pie shells. Evenly sprinkle bacon bits on top of each quiche.</li>
<li> Bake for 40 mins. or until centre is set and slightly golden brown. </li>
<li>Let sit for 5 mins and serve hot or cold.  </li>
</ul>
<p>Other filling options to try:</p>
<p>spinach, sundried tomato, basil and feta</p>
<p>italian sausage, mushroom and cheese</p>
<p>ham, pineapple &amp; mozzarella (sounds weird but I have had one from a bakery  in Paris and it was fantastic)</p>

<p>This is a recipe I made often in University to get some fruit content in my diet. Plus it is good in the cold fall/winter months with all those un-waxed fresh Oakanagan apples.</p>
<p><strong>Recipe:</strong></p>
<p>5-6 <strong>Large Apples</strong>, I used Gala and Ambrosia Apples (any kind of firm flesh apples are good, just not Red Delicious or Spartan)</p>
<p>1 cup <strong>Water or Apple Juice</strong></p>
<p>1/2 cup <strong>White or Brown Sugar</strong></p>
<p><strong>Cinnamon</strong> (to taste- about 2 tsp)</p>
<p>-Core and slice apples thinly or into chunks, for a chunkier applesauce). You can peel them if you like, but the peels add extra nutrients and taste.</p>
<p>-Put apples in a large pot with 1 cup apple juice or water, 1/2 cup sugar and cinnamon to taste.</p>
<p>-Simmer over medium heat, stirring every 5 mins with no lid</p>
<p>-Cook until apples are tender (about 15 mins) and you can mash them with a potato masher. If you like smoother applesauce, you can mash them more.</p>
<p>-Transfer to bowl and let cool. It will keep a few days, but it never lasts that long at my house.</p>

My mother-in-law&#8217;s birthday is today so I sat down last night and created a Black Onyx and Hematite necklace for her because it was the last minute, and I am a procrastinator like that. It was soo pretty I wanted to keep it myself, but that is how you tell it is good enough to give away I suppose. Here it is&#8230;</p>

<p><strong>Whole-Wheat Double Chocolate Banana Pancakes</strong><br />
A variation on my stand-by pancake recipe.</p>
<p><strong>In a medium mixing bowl, mix together:</strong><br />
1 1/2 cups Whole-Wheat Flour<br />
1/2 cup Quick-Cooking Oatmeal<br />
2 Tbsp White or Brown Sugar<br />
3 Tbsp Cocoa Powder<br />
3 Tbsp Baking Powder<br />
pinch of Salt</p>
<p><strong>In a measuring cup, mix:</strong><br />
3 Eggs, lightly beaten with a fork<br />
Enough Milk to come up to the 2 Cup line on the measuring cup<br />
1 tsp Vanilla Extract</p>
<p><strong>Stir in wet ingredients into the dry ones until just mixed. You may add a bit more milk if needed to get a smooth batter.<br />
</strong></p>
<p><strong>Mix in:</strong><br />
2 Medium Ripe Bananas, sliced thinly<br />
1 cup Semisweet or Dark Chocolate Chips</p>
<p>Heat a non-stick frying pan or griddle to medium heat (5). Ladle portions onto griddle, making sure they don&#8217;t touch. Cook for 2 mins or until bubbles appear on top and edges look dry. Flip, and cook another 2 mins on the other side, or until golden brown.</p>

<p>We usually just buy the Costco Broccoli Salad, but they were out when we went there lastnight- I guess the word is out. If you ever need a dish for a potluck, this is my go-to option when I don&#8217;t have time to cook anything spectacular. My own version is below.  </p>
<p><strong>Broccoli Salad</strong></p>
<p><em>Serves 8</em></p>
<p><strong>For Dressing, Whisk together in the bottom of salad bowl:</strong></p>
<p>3/4 cup Miracle Whip or Hellman&#8217;s Mayonnaise<br />
5 Tbsp White Vinegar<br />
3-4 Tbsp White Sugar, to taste</p>
<p><strong>Salad:</strong></p>
<p>3 Heads Broccoli, washed &amp; chopped into bite size pieces<br />
1/2 cup Dried Cranberries<br />
1/2 cup Slivered Almonds or shelled Sunflower Seeds<br />
1 cup crumbled Feta Cheese (I use low-fat)<br />
1/2 cup Real Bacon Crumbles<br />
1 cup Green Grapes (halved- Optional)</p>
<p>If you prepare salad ahead of time, toss with dressing just before serving.</p>

I work at a University as an Educational Technician- so basically helping implement Learning Technologies.  It is a fairly new job, but I love it so far.
